Roast Beef with Garlic Inserts

Okay, I tried this recipe this evening. It was wicked, although my 1 year old daughter wasn’t too fussy about the garlic cloves. She ate the meat but passed on the garlic. If she’s anything like her Dad she’ll come around soon.
Anyhoo I over cooked the meat slightly but next time it’ll be perfecto. See below for ingredients and instructions…….good luck.

Ingredients:

Beef Roast: 300 gr (boneless and trimmed)
Butter: 1 tbsp
Garlic: 4 cloves
Onion: 1 medium
Tomato Paste: 1/2 tsp
Turmeric: 1/2 tsp
Beef Broth: 2 cups
Olive Oil: a splash

Directions:
1. Preheat oven to 300 degrees F.
2. Peel the garlic cloves and use The Garlic Chop to chop the garlic. Then dice up onion.
3. Saute onion until brown and then put in the turmeric.
4. Then cut vertical incisions into the beef and insert garlic cloves around the roast.
5. Put the roast with the sautéed onion and brown on each side.
6. Introduce the tomato paste and continue to cook for another minute or so
7. Add the beef stock to the pot and bring to simmer, add salt and pepper.
8. Cover with aluminum and cook in the oven for 2 hours or until the inside temperature reaches 135 F. (Check on the roast halfway through to make sure there is enough broth).
9. Take off aluminum and cook for 10 minutes longer
10. Let the roast rest for 10 minute tented in aluminum foil before carving.
