Guyanese Pork Garlic Recipe
Ingredients:
You will need some time for this garlic recipe. Like 4-5 days……but it’s totally worth it.
Getting started: Thinly sliced “fresh” pork. salt, vinegar, chopped garlic, and fresh thyme.
- Get yourself a large glass jar. Bank in using this for pork only to avoid contamination
- Sprinkle (generously) salt, chopped garlic and thyme on the bottom of the jar.
- Place the pork on top of the chopped garlic et all.
- Again, Sprinkle (generously) salt, chopped garlic and thyme on the bottom of the jar. Then add another layer of pork. Keep going until the jar is three quarters full.
- Make sure the final layer is the chopped garlic etc
- Fill the jar with vinegar. Then make sure all air bubbles are released by pushing down on the pork.
- Leave for four to five days. I would suggest opening and moving the meat around once a day to make sure the flavor crystals of the vinegar is making its way through all of the pork.
- On the last day boil the meat in water (with thyme and chopped garlic) for three to five minutes. When done try it with paper towels.
- Fry in olive oil until golden brown.
- Eat!!
